To All Newcomers...

I honestly don't know if this is even necessary but i thought i'd put a quick post up for any fellow bloggers redirected to my site from my friends' site, considering she has a higher volume of followers.

Anywho! welcome... I don't have much of a theme or boundaries with my blog...I kind of just speak about whatever is inspiring to me that I'd like to share (music, food, family, etc.) Take a look around, if you think you jive with what you see I'd love to have you stay :)

Have a great weekend.

Drunk Girls - LCD Soundsystem

I think I just figured out my next party theme

...whose in?!!?

ha ha ha ...but seriously.

Roasted Butternut Squash Salad with Warm Cider Vinaigrette

Tonight I made the below (or above, whichever) with a few tweaks due to supply shortages. Overall everyone loved it. I think it's a good sign when all your guests can talk about (in between bites) is how good the meal is and which part they are currently enjoying. So I thought I'd share the wealth.

Cook Time:28 min Level: Easy Yield: 4 servings

Ingredients

1 (1 1/2-pound) butternut squash, peeled and 3/4-inch) diced
Good olive oil
1 tablespoon pure maple syrup
Kosher salt and freshly ground black pepper
3 tablespoons dried cranberries
3/4 cup apple cider or apple juice
2 tablespoons cider vinegar
2 tablespoons minced shallots
2 teaspoons Dijon mustard
4 ounces baby arugula, washed and spun dry
1/2 cup walnuts halves, toasted
3/4 cup freshly grated Parmesan

Directions

Preheat the oven to 400 degrees F.

Place the butternut squash on a sheet pan. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1/2 teaspoon pepper and toss. Roast the squash for 15 to 20 minutes, turning once, until tender. Add the cranberries to the pan for the last 5 minutes.

While the squash is roasting, combine the apple cider, vinegar, and shallots in a small saucepan and bring to a boil over medium-high heat. Cook for 6 to 8 minutes, until the cider is reduced to about 1/4 cup. Off the heat, whisk in the mustard, 1/2 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon of pepper.

Place the arugula in a large salad bowl and add the roasted squash mixture, the walnuts, and the grated Parmesan. Spoon just enough vinaigrette over the salad to moisten and toss well. Sprinkle with salt and pepper and serve immediately.

Jesus!

man. This weeks Congregation Bible Study blew me away. I probably texted some of you already about this, but its the only thing i'm really inspired to post about...so deal with it.

here are my favorite quotes...

"But Jesus does not cower, does not flee, does not blurt out some lie. Instead he simply says: 'I am he.' His manner is so calm, so brave, that the men are astounded. They stagger backward and fall down!"

and

"One thing is certain: Anyone who expects Jesus to cower knows little of the man."

BOOM!

man. this got me so excited! lol.

And then I was thinking about the lions I saw on safari...and it's so true what paragraph 5 brings out that,

"As you look into the face of this huge and powerful creature and he gazes steadily back at you, you can hardly imagine the lion ever fleeing anything"

It's so true, their stare is so intense and unwavering. Their eyes pierce through yours and your very core is shaken.

man.

Beach House

I was just browsing on Youtube for some salt to rub into my 'longing to see Beach House live' wounds, and stumbled upon this...

I thought it was cute that she was so into it...and jay-Z seemed to be enjoying himself as well.

Anyways here's the real stuff. Enjoy...

"i would like to be someone you could finally learn to love again"

Spring....Organizing?

I'm getting organized today.

i have a few ventures i want to embark on and i feel like they are adding up and i'm getting overwhelmed but i know it's not that big of a deal. so i just have to take some time, sit down, and gather my thoughts. some of my new ventures are... i want to make the extra bedroom in my house a massage room (i'm excited about this one, maybe i'll actually feel like a professional) i want to start selling some stuff online (i'm NOT excited about this, i hate the internet) and i have a few people i owe presents to so i have to make a list and get on with that (i'm definitely excited about that, let me know if you want something from me...this would be the time to exploit me) :)

oh and in case your wondering about the picture...i have no idea who it is.
i just found it when i was going through some of my old files today. enjoy.
